Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina

We will learn how to make two types of pasta: one stuffed and one unfilled.
We will learn how to make meat ravioli the way my grandmother used to make them.... I will tell you the secrets of a traditional three-meat stuffing, for which I will pass on the recipe. We will make forty-yolk noodles. We will use very fresh and tasty pasta sauces. We will learn how to make traditional tiramisu with my own recipe. Finally we will enjoy what we have prepared together, accompanied by excellent local wine and followed by espresso coffee. It will be like going back in time, enjoying traditional and genuine flavors.

- Very nice experience. Barbara is really a great host. We felt comfortable very quickly at her place. Time flew by at an incredible speed while preparing pasta and tiramisu and discussing while sharing a glass of wine.
- Barbara was such an incredible host! The best part for our family was her experience having little ones in the kitchen. We all had fun, learned a lot, ate well (of course), and felt completely at home. Thank you!
- My son and I thoroughly enjoyed this experience. We learned a lot. He absolutely hates spinach, but Barbara made a mix of spinach, leek and ricotta cheese. (I need that recipe!) He had a large portion of the ravioli when it was complete. Now, he wants to make ravioli at home. But I do not have any of the equipment- so I have to roll out the pasta etc with a rolling pin and make them by hand. Oh well.... We would certainly do another class like this again.
- Barbara was a delightful host. Warm and welcoming and immediately made us feel at home. She was very patient and helpful in teaching us. Had lots of interesting stories about food and wine making in Italy. We thoroughly enjoyed the meal she helped us make and her company. We've learnt many valuable skills in pasta making which we plan to use at home. Grazie !

I have always enjoyed cooking delicious and tasty things. Recently I'm specializing in the production of fresh pasta and pizza. Main courses of meat, including horse (Salento influences, especially pieces of horse). I could easily offer both a Piedmontese and a Salento menu with homemade orecchiette and pieces of horse, accompanied by an excellent Salento primitivo. I like strong flavors and savory dishes and I always try to give the dishes character. I like to use flavors and spices."
