    This cooking class will introduce you to the authentic crescentine of Bologna, delicious diamond-shaped dough bites made with flour, lard (or olive oil), salt, milk – including plant-based options for vegans – and a touch of leavening. After kneading and frying them in seed oil, we will pair them with cured meats, cheeses, or vegetables, depending on the guests' preferences. To make the experience even more special, we’ll enjoy them with a glass of fine prosecco.

    A Truly Unforgettable Cooking Experience with Paola in Bologna Taking a cooking class with Paola was one of the absolute highlights of our time in Bologna. From the moment we stepped into her beautiful home, we were welcomed not only as guests, but as friends. Paola opened her kitchen and her heart to us, guiding us through a hands-on cooking experience that was as joyful as it was delicious. We learned how to make a delicate squash soufflé, a perfectly crispy and tender cotoletta, and a indulgent, creamy tiramisu - each dish full of flavor, tradition, and love. Cooking with Paola felt like being part of a true Italian family. We laughed, shared stories, and sat down afterwards to enjoy the meal we made together - which was truly one of the best we had in Italy.     I attended the cooking class with my 13yo daughter, because we were both curious how the proper ragú al bolognese is prepared. With Paola not only we learnt two types of ragú but also two types of pasta. In her lovely house and beautiful kitchen she led us through the process with love and patience. She also prepared some delicious antipasto. Paola is a great cook, perfect teacher and really good companion for a chat, too. I hope, Paola had great time with us as we had with her.
