    Arancina is the Queen of Palermo Street Food. It is a ball of rice, filled with a tasty filling of meat or cheese, breaded and fried in abundant oil.

    During this experience you will learn all the secrets to preparing fantastic arancine, following the recipe my grandma handed me down. I will show you the most suitable rice and its particular cooking method to remain 'al dente' but at the same time very compact, the preparation of the filling with ragout and pieces of cheese or with bechamel, ham and cheese (my favourite), up to the breading. I also offer vegetarian variations. At the end of the preparation we will sit at the table to taste the fruit of our work together with some good local wine or beer

    Alice & Francesco were amazing hosts! Our group absolutely loved visiting their beautiful home, cooking traditional Sicilian pasta & tiramisu, & trying different local foods. What made our evening with A&F so special, was their incredible generosity! We were also blown away by their friendliness & the amount of information they were able to share with us, not only about the local produce & traditional recipes but also about Palermo’s politics & history.     "I was passionate about cooking and food since I was a child, accomplices grandmother who loved to cook and the whole family who loves to eat well. I therefore decided to pursue a university career in the field of gastronomy. I have faced a multidisciplinary and holistic path that has treated the world of food at 360 o'clock. I love cooking for my family and for others, starting from the choice of recipes and the selection of ingredients. I like to experiment and I'm particularly passionate about pastry and leavened foods. I do research on ancient cookbooks and asking around, especially older ladies, their family recipes. Sicily, like all Italy, has an invaluable gastronomic heritage, whose recipes and preparations vary from house to house, not only between cities and provinces. This gives the palate the opportunity to enjoy the same traditional dishes with different ingredients, techniques and stories."
