Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina
Shared Experience
Your experience
During this experience you will learn how to make cannoli from scratch: the most classic of Sicilian desserts characterized by a crispy shell lightly flavored with cinnamon filled with enveloping ricotta cream sweetened with sugar and chocolate chips. All with local raw materials!
We will start with the dough, and while it rests we will prepare the ricotta cream, then proceed to rolling and forming the cannoli wrapped on traditional river reeds and frying them. As soon as they are cold we will fill them with the ricotta cream and decorate with homemade candied orange peels and pistachio granola. At this point we will end the experience by tasting the freshly prepared cannoli paired with homemade liqueurs such as limoncello or marsala wine.

- An incredible experience cooking with Alice. Learned a lot about food history of Italy generally and Sicily in particular. We enjoyed the chat over lunch. We'll remember this experience for the rest of our lives. If you're thinking about booking, just do it. You won't regret it.

- Alice and Francesco were absolutely wonderful! No matter how many times I messed up they were so patient and made me still feel like I can do this. We learned so much about pasta making and are looking forward to trying on our own once we get home! If you’re in Palermo, learning from them is a MUST! The recipes were delicious and they made us feel at home in their home.

Alice
Cesarina from 2022Location: Palermo Languages: English, Italian, Spanish, French"I was passionate about cooking and food since I was a child, accomplices grandmother who loved to cook and the whole family who loves to eat well. I therefore decided to pursue a university career in the field of gastronomy. I have faced a multidisciplinary and holistic path that has treated the world of food at 360 o'clock. I love cooking for my family and for others, starting from the choice of recipes and the selection of ingredients. I like to experiment and I'm particularly passionate about pastry and leavened foods. I do research on ancient cookbooks and asking around, especially older ladies, their family recipes. Sicily, like all Italy, has an invaluable gastronomic heritage, whose recipes and preparations vary from house to house, not only between cities and provinces. This gives the palate the opportunity to enjoy the same traditional dishes with different ingredients, techniques and stories."
